Spill The Beans: What's For Dinner?

Dinner time again (and again and again). You know that joke: who knew being an adult was simply trying to figure out what to eat for dinner every day? Today, we did the figuring for you. Try this Red Lentil Soup, a recipe shared by Green Calgary’s workplace specialist Grace, for a healthy, delicious, it’s-almost-spring-but-feels-like-winter meal. Eat it tonight and freeze the rest for another day. 

Ingredients 

2 carrots 

3 celery sticks 

3 medium red of white potatoes 

2 tbsp olive oil 

1 can diced tomatoes (798ml) 

4 cups water 

2 vegetable bouillon cubes (or 2 cups vegetable broth) 

1 cup red lentils 

2 tsp garlic powder 

½ tsp thyme 

1.2 tsp oregano 

1 tsp Italian herb mix 

Salt and pepper to taste 

Optional 

1.4 tsp red chili flakes 

Directions 

Rinse and dice carrots and celery sticks (small). Rince and dice potatoes (medium) 

Heat olive oil in a large pot over medium heat. Sauté onions and celery for 2-3 minutes 

Add remaining ingredients 

Bring to boil and reduce heat to medium-low. Simmer for 20 minutes or until lentils are cooked through. Add salt and pepper to taste and serve
